GreenProtein AI

Utilizing machine learning and AI to predict and optimize the extrusion process in the production of plant-based meats.

Extruders are the machines that many companies globally use to create plant-based meats. But setting up new runs of ingredients, which can vary in quality and properties, involves costly and time-consuming trials to fine-tune the final result.
Our pioneering project, GreenProtein AI, is set to transform this process. In partnership with machine learning and AI expert consultants as well as extruder manufacturers, we are tapping into the power of data to accurately forecast the final product texture. Our innovative method moves away from the inefficiencies of conventional trial and error, aiming to refine the texture of plant-based meats and boost development efficiency. This initiative not only holds the potential to reduce consumer prices and accelerate innovation but also to expand the role of extruders in the production of plant-based meats.

About the project:

Collaborators and users of our model stand to gain:

• Time and Cost Savings: Reduce the number of experiments needed to optimize product formulations and extrusion parameters.

• Enhanced Product Quality: Improve the texture of plant-based products through data-driven insights.

• Market Acceleration: Develop and scale up new products faster, gaining a competitive edge.

• Price Parity: Lower prices for consumers, potentially achieving price parity between plant-based and animal-based food products.

• Innovation and Expansion: Speed innovation and expand the use of extruders in plant-based food production.

Benefits to all stakeholders:
